CO-FOUNDER
Lesley Milhas is a Louisiana native with deep family roots in Chalmette, located in St. Bernard Parish—a place known for its resilience, culture, and unforgettable food. That heritage lives on in everything she brings to the table, especially her soulful Louisiana-style cooking. From rich, slow-simmered gumbo to bold, comforting flavors, Lesley’s culinary voice is grounded in tradition, memory, and heart.
Lesley and Jesse have worked side by side for over a decade—11 to 12 years of growing, building, and evolving together. She began her journey as a server and quickly became an essential force behind the scenes, serving as Catering Director, Events Planner, and ultimately General Manager at Never Blue. Her leadership, organizational brilliance, and people-first approach helped shape the restaurant’s success and culture at every level.
That long-standing partnership naturally led to the decision to open Blue Ruby and Ruby De Noche together—businesses built on trust, shared vision, and years of mutual respect. Lesley brings not only operational expertise, but warmth, creativity, and a deep understanding of hospitality that makes people feel genuinely welcome.
Outside of the restaurant, Lesley is a devoted mother to her beautiful daughter, Charley, and is married to her wonderful husband, Jason. Their unwavering support is a constant source of strength. Above all, Leslie is a beloved partner in business and in life—a best friend, collaborator, and cornerstone of everything Blue Ruby and Ruby De Noche represent.

CHEF
Edson Roque was born and raised in Tamaulipas, Mexico, where a deep respect for hard work, family, and resourcefulness shaped who he is today. A proud Mexican national, Edson brings a lifetime of hands-on skill, adaptability, and quiet leadership into everything he does.
In the kitchen, Edson is a force—the fastest cook you’ll ever meet, with an instinctive understanding of timing, technique, and flow. A true jack-of-all-trades, he can step into any role, solve any problem, and keep things moving no matter what the day throws his way. If something breaks, he fixes it. If there’s a challenge, he finds a solution.
Outside the restaurant, Edson is an expert fly fisherman, survivalist, and outdoorsman, happiest when camping, fishing, or immersed in nature. He remains deeply connected to his roots, with family still living in Tamaulipas, and he and his family are looking forward to building a home in Oaxaca, Mexico, where tradition, creativity, and community continue to inspire their future.
Above all else, Edson is an exceptional father, devoted husband, and genuinely good human being—steady, capable, kind, and endlessly reliable. His heart, skill, and spirit are woven into the foundation of the restaurant every single day.

MANAGEMENT CONSULTANT
Born in 1947, Bill Cosner has lived a life defined by curiosity, service, and steady leadership. As a young man, he served in the Vietnam War—an experience that shaped his discipline, perspective, and deep sense of responsibility that carried through every chapter of his life.
With a scientific mind and an entrepreneurial spirit, he built his professional foundation as a microbiologist before earning his MBA and stepping into the world of management consulting. Over the years, he worked as a trusted consultant, owned and operated his own companies, and helped guide organizations through growth, change, and problem-solving with clarity and integrity. Consulting was always at the heart of his work—helping people see the bigger picture while managing the details that truly matter.
Though officially retired, he never really stopped working in the ways that count. He continues to mentor his family in business, generously sharing decades of experience, hard-won wisdom, and calm guidance. His influence is especially meaningful to his daughter, who followed a parallel path in management consulting—proof that leadership, when modeled with care, leaves a lasting legacy.
Outside of work, he finds peace on the water with a fishing rod in hand and joy in simple pleasures—none greater than a good serving of bread pudding, his undisputed favorite. Above all, he is a devoted and deeply loved father: steady, supportive, and always present when it matters most.
